Greengage tart, only until November
Six weeks a year, a farm near Aranjuez sends us greengages. This is what happens to them.

Plums are in!
Greengages are the plums nobody grows any more: small, green-gold and sweeter than they look. A family farm near Aranjuez still has a row of old trees, and since 2015 the whole crop comes to us.
We halve them by hand, lay them cut side up on a butter shortcrust and bake until the edges catch. No glaze, no cream: just a spoon of sugar and the juice that runs into the pastry.
When to come
The tart comes out with the 16:00 bake, from Tuesday to Saturday, and usually lasts until about six. You can order a whole one (eight slices) with three days’ notice from the orders page.
When the trees are done, so is the tart. Last year that was the 9th of November.
